Broccoli stalks are often thrown out, but you can chop them up, boil them, and then toss them in the blender to make a yummy soup. Just add a handful of raw cashews (my favorite!) or some organic tofu along with seasonings like thyme and a bit of extra virgin olive oil. Then blend the mixture until it’s creamy (adding as much or as little of the broccoli water from the pot as you like.) You’ll get a quick, extra meal loaded with fiber and phytonutrients and get more bang for your buck.
Holistic Secret: Store broccoli (and other veggies like asparagus or greens) in a glass jar or mug with some water in the fridge. Your produce will last a lot longer!
